Brown Chapati Recipe
The best flour again is the Winnie’s pure health whole wheat which are also mixed with some other whole grains like Amaranth, Rye
Ingredients
- 2 cups of Whole Wheat flour
- 4 Tbs of Extra Virgin Olive oil
- Half a cup of pure sunflower oil (A very neutral oil in terms of taste, odour and does not smoke easily like olive oil when heated.)
- 4 Table spoons of honey (Preferably Organic Honey that is free of preservatives, flavourings and colourings)
- 2 cup warm water (you will know the balance when kneading the dough)
- 1 small pinch of sea salt to bring up the seasoning.
Method
- Warm the water and mix everything together in a plastic container and knead the dough vigorously for 7 minutes until it becomes a nice solid ball. (warm water brings the whole wheat to life)
- Leave the dough to sit for at least 30 minutes but ideally overnight.
- With a rolling pin, put some heart and soul in that chapati, adding some flour all over to make sure it does not get sticky.
- Heat the pan on low medium heat for 3 minutes, then add sunflower oil and heat it for 3 minutes under low heat. (I know low heat will take more of your time but low heat ensures the lowest nutrition loss and HCAs {cancer-causing compounds} are curbed.
- Cook both sides while applying pressure with your bamboo utensils or hand which is most effective.
- Put in a hot pot and leave to rest for 30 min – 2 hours
Red Lentil Stew Recipe
Ingredients
- 2 cups of red lentils/ndengu kamande
- 2 big carrots
- 1 potato
- 1 Garlic bulb
- 1 ginger root
- 2 tomatoes
- 1/4 tablespoon Natural salt/sea salt
- 1/2 table spoon curry powder
- 1 small cup of sugar snap peas
- Broccoli stalks
Method – Making the Lentil stock/broth
- Cut tomatoes, potato, garlic and ginger into halves and put in the sufuria with the lentils, salt, curry powder, broccoli stalks and sugar snap peas.

- Add water to a ratio of 3:1 water and the other stuff respectively and put on medium heat and bring to a boil.
- When it reaches boiling point, lower the heat to attain a simmer i.e. small bubbles instead of big bubbles.
- Let the both simmer for 3o minutes
- Set the stock aside from the lentils and boiled veggies which can be puréed and made into a sauce of sorts.
- Start stir frying your garlic, then onions, then potaoto and cilantro/ndania stalks…add some lentil stock and cover for 3 minutes then add the lentils and the rest of the stock. Put on a medium-low heat and let it cook for 25 minutes.
- Chop the cilantro leaves and add after removing the stew from the stove and let it rest for 10 minutes.
Steamed Broccoli
The best way to cook broccoli and other veggies is steaming them lightly so as not to destroy the delicate nutrients, enzymes and minerals found in these greens.

You need you 1 head of broccoli, a pinch of natural salt or sea salt, 4 tablespoons of water and a sufuria of course.
Method
- Chop the broccoli and let it sit for 5 minutes << this initializes some enzyme reactions that release the cancer-fighting qualities of broccoli.
- Put the broccoli, water and salt in the sufuria and stir.
- Put on low heat for 5 minutes and your done.

I thin what Kenya needs is healthy eating, though isnt that oil a bit much?and what about those guys who cannot afford olive oil which is too expensive for most of us?
As long as it is extra virgin oil then one can have a lot of oil, in fact, extra virgin olive oil helps to burn fat as opposed to conventional thinking . Unrefined peanut and sesame oil are cheaper choices, KES 395 for 1/2 litre and are healthy. extra virgin sunflower is healtheir but tastes bad and spoils the good taste of the chapati. Refined Sunflower oil is much better in terms of taste though not very healthy.
