After seeing many updates about pizza fest last week, the first thing that came to my mind was price/value, obviously. The average prices were about Ksh 1200 for a large pizza which makes me wonder why they charge all that for bread, a little cheese and some toppings.
Quick Pizza Dough
-Making pizza at home is easy, healthier, tastier and more fun. If possible, just try one day. The crust is simply a little yeast, warm water, honey, wholegrain flour, 1 tablespoon of ground chia seeds, unsalted butter and a pinch of salt.
-You then let that dough rest in a warm place for about an hour, punch it down, make pizza shape and let it rest for another 40 minutes.
-Preheat oven 190C, brush dough with extra virgin olive oil, bake in the oven for about 20 minutes, then add the heat to maximum to brown the bread for about 5 minutes, while watching carefully.
-You can get great pizza sauces in the supermarket, I like American garden on anything artisanal, especially Italian ones. Homemade is always best.
-Best cheese is mozzarella (many supermarkets have this cheese nowadays), preferably fresh which you can get from nakumatt.
-Parmagiano-reggiano also works but it needs to be freshly bought, not too old.
-Toppings are so many but I mostly like black olives, roasted chorizo, roasted tomato, pancetta or bacon, sauteed mushrooms. I even put kale on a pizza once…delicious.
-Just top your pizza and cook it in oven, broiler setting (meaning the heat comes from the top elements/gas).
-If you don’t have an oven you can cook the pizza dough like chapati, low heat, a little oil then add your toppings and cover with a metal sufuria which will emulate an oven, still delicious
-Okay, it might not look like your regular pizza but it tastes much better and it is healthier. Win, win.
