I just hacked a delicious frozen yogurt recipe that is so easy to make and healthier than any ice cream you can get. And, you only need a blender and easy-to-find ingredients.
Frozen yogurt is just like ice cream but better because the sour flavor of the yogurt works well to balance the sweetness of the fruit and usual sweetener. Plus yogurt has good bacteria. If you can get kefir that would be even healthier. I think I will start making my own kefir because of this recipe.
Homemade “Ice cream” has fewer calories than store-bought or deli ice cream. I heard on some healthy cooking show that a small serving of bought ice cream/frozen yogurt can have about 300 calories and homemade can be around 90. I am not a person to count calories but that difference really caught my attention.
Anyways, the recipe is so easy you have to try this, especially with the hot sunny day ahead.
-2 cups plain yogurt/greek-style yogurt
-1/2 cup cranberries (if using dried soak for 15 minutes in water), strawberries, blueberries or any berry you can get. Even bananas, pineapple, apples or any seasonal fruit that you can get though berries are just perfect for ice cream.
-1/4 cup of fresh mint leaves
-1/4 teaspoon lemon zest (grated lemon skin)
-1 tablespoon fresh lemon juice
-1/4 teaspoon vanilla extract or essence
-3-5 tablespoons (to your liking, taste first ) organic honey or a good honey that you trust. You can also use maple syrup or even sugar syrup, just don’t do this every day 🙂
Put in a blender and pulse about 5 times and then blend on high speed for about 1 minutes. You may leave some chunks of fruit for texture or add some crushed nuts before putting it in the freezer. It needs at least 2 hours in the freezer but overnight is ideal for the flavors to mingle.
