I am brown rice guy but sometimes I make healthier white rice dishes for my clients who love their white rice and this is one of my favorite. It is easy, quick, cheap and uses locally available ingredients.
-1 Soak 1 cup rice in 1 cup water.
-Heat sufuria on medium heat, add a little coconut oil, some crushed garlic, chopped onions, tomatoes, dania, chili pepper, carrots, and broccoli. Cook for about 3 minutes until aromatic.
-Put 1/2 teaspoon cumin seeds and cook them for about a minute to release flavours.
-Add the soaked rice together with the soaking water which adds flavour.
-Add 1/2 cup desiccated coconut.
-Add about 1/4 teaspoon sea salt and a little freshly ground black pepper.
-Cover and cook for about 14 minutes. Rest for about 3 minutes uncovered and serve with kachumbari and maybe some bean stew.
