Muffins usually have 50% less fat and sugar than cupcakes/cake so they are a good healthier treat. Chis seeds add a lot of nutrition and fibre to the baked goods without influencing the taste. -1 cup whole grain chapati afya flour
-1/2 cup chia seeds or ground chia seeds (you can use your grinder to grind the seeds yourself to get maximum health benefits, you know that small attachment that comes with most blenders)
-a pinch of salt
-1/4 cup local brown sugar or honey (more or less to your liking)
-1 teaspoon cinnamon powder
-1 teaspoon vanilla essence/extract
-1 teaspoon baking powder
-1/4 teaspoon baking soda (for extra rise)
-1/3 cup fermented milk/mala
– 2 tablespoons of virgin coconut oil or unsalted butter
-zest of 1 small lemon
-juice of 1 fresh lemon
Preheat oven to 190 C, Sift the dry ingredients together, mix the wet ingredients gently, then mix the wet and dry ingredients. You want and very thick batter. Don’t worry, the fermented milk/mala and oil/butter will keep them moist and soft.
Bake for about 22 minutes. Start checking after 20. Ovens are different.
Cool for 20 minutes on a rack and enjoy. They can keep well in a cool, dark and dry place inside brown paper bags. Yum.
