I love me some vegetables. When selected and cooked right, they taste really good and they are very affordable. Not to mention the immense benefits that green veggies bring to the table.

Recent studies show that we need about 2 servings of green leafy veg every day. Most people barely eat 2 servings per week simply because they do not really know how to make them taste great.

The simple technique that applies to almost all vegetables is to saute which is basically frying on medium-low heat with a little oil in a wide frying pan. Make sure to even use the broccoleaves.

You can even leave the oil out and use a little bit of water but the best oils for these are extra virgin olive/coconut oil. Some red onions, sea salt and freshly ground black pepper are all you need.

Heat your pan over medium-low heat, add the oil then the broccoli and onions, season with salt and pepper. Cook each side for about 3 minutes. You want it a little crunchy to preserve nutrients and taste. Serve.
