Pumpkin is bae. It is so nutritious, so tasty and it freezes so well. The seeds, unbelievable. They have a mild nutty flavor and they pack a lot of nutrition. This is a real superfood. The downside is that it can be very unforgiving in terms of the cook. If you overdo it, you end up with almost inedible mash. Baby food.

You can cook a big batch in the oven, add some spice and prevent sogginess.

  1. Preheat oven to 200C
  2. Season pumpkin with sea salt, freshly ground black pepper, whole cumin seeds, extra virgin olive oil
  3. Cook in the oven for about 25-30 minutes, flip them 15 minutes in to prevent burning. Serve with veggies and soup
