Coconut is one of the best things to cook with. If you can get around the hard shell and fruit, then you are in for a treat. I am lucky because there is a big Coasterian population in my hood so the coconuts come in fresh daily and the vendors can grate it for you, for free or a very small fee.

I absolutely love to bake with the fresh coconut, a recipe for another day. Today, we will make coconut brown rice

  1. Soak the grated coconut in coconut water plus a little more water, about 10 minutes, squeeze through a clean kitchen towel to make coconut milk.
  2. Soak the brown rice in coconut milk, about 2 hours. Add a little more water if the coconut milk is not double the amount of rice.
  3. Add sea salt, cover, bring to boil, reduce to medium-low heat, cook for about 30 minutes then add the fresh coconut. Check the moisture level. You might need to add a little more water to prevent burning. Cook for another 15 minutes, remove from heat, let it rest, another 15 minutes.
  4. Serve with bean stew, veggies, and avocado.
