Making Mukimo is all about great ingredients and timing. Potatoes, cut like so, cook in about 10-12 minutes. Everything else takes less time.

Make sure you also start cooking with salt, and you also taste again after cooking, before mashing. The unripe green bananas make it smoother and easier to mash. Delicious.

If you don’t overcook the veg, they remain green and vibrant. No need for baking soda and any other funny business.
