Guacamole is a simple Mexican side dish that is mostly avocado and other stuff. It varies, region to region and this is my new favourite way to make it.
- Chop the red onions to a super fine dice, add a pinch of coarse sea/Himalayan salt, crush with the flat side of the knife, add sea salt.
- Squeeze out the bitter juices. This will make them more palatable. Chop your dania/fresh coriander, chili peppers, avocado, mash with a mortar and pestle. Add a little bit of fresh lemon juice. Eat immediately but it gets better after about 2-3 hours.
- Serve with ugali, mixed kienyeji vegetables (managu, terere, kanzira), and pork-veggie stir fry.
