Guacamole is a simple Mexican side dish that is mostly avocado and other stuff. It varies, region to region and this is my new favourite way to make it.

  1. Chop the red onions to a super fine dice, add a pinch of coarse sea/Himalayan salt,  crush with the flat side of the knife, add sea salt.
  2. Squeeze out the bitter juices. This will make them more palatable. Chop your dania/fresh coriander, chili peppers, avocado, mash with a mortar and pestle. Add a little bit of fresh lemon juice. Eat immediately but it gets better after about 2-3 hours.
  3. Serve with ugali, mixed kienyeji vegetables (managu, terere, kanzira), and pork-veggie stir fry.
