This is what I used to eat all the time on campus. I was very skinny and my health was on point. Eating more plant-based foods is also great for digestion i.e. preventing or treating constipation.
I prefer getting my maize flour directly from the posho mill. They can even grind some good quality maize for you on request. Tamu sana.
Traditional veggies like managu, terere, mrenda and kanzira are usually grown naturally without pesticides. Some are even foraged from the wild I have picked wild terere myself. The real organic food.
